There are still a few more weeks of summer left. With that I set out to find cool treats for my kids and I to enjoy. That’s when I came across a recipe for yogurt popsicles from Andrea Rincon’s blog that I found on Pinterest. I knew immediately that I could easily make these with items already in my fridge.
I made a few modifications to adjust to my kids’ needs.
Ingredients:
1 large container of plain low-fat yogurt
3 tbsp or honey (more/less to taste)
Chopped fruits of your choice (on these pictures I used strawberries, blueberries and bananas)
Plastic popsicle trays (or you can get popsicle sticks and bags for popsicles)
How to Make:
Whisk yogurt with honey in large bowl (set aside). Chop the fruit to whatever size you prefer. Combine yogurt mixture with fruit. Pour into popsicle trays and freeze for at least 6 hours.
My kids love this treat. To them it’s a popsicle. They don’t care that there is fruit in it. It’s a win, win situation!
I love it because it’s a low calorie option and I get to use fruits that sometimes could end up going to waste.
You may go to Andrea Rincon’s blog to get the original recipe if you wish. In the meantime, enjoy the last few weeks of summer with this delicious and healthy snack.
