I’m in the pumpkin mood so I made these over the weekend. I was inspired by a recipe I found at Allrecipies.com.
Pumpkin Pancakes
Ingredients :
2 1/2 Cup Aunt Jemima Original Pancake Mix
3 tablespoons brown sugar
2 1/2 teaspoon pumpkin pie spice
1 egg
1 3/4 cup milk
2 tablespoons vegetable oil
2 tablespoon vinegar
1 cup pumpkin puree
Butter or cooking spray
Griddle
Preparation:
1- Heat griddle to 325 degrees Fahrenheit.
2- In a bowl, mix together the milk, pumpkin, egg, oil and vinegar.
3- Combine the pancake mix, brown sugar, pumpkin pie spice in a separate bowl.
4- Stir into the pumpkin mixture just enough to combine.
5-Use butter or cooking spray before pouring batter in the griddle.
6- Pour or scoop the batter onto the griddle and brown both sides.
