I had one last box of Betty Crocker Red Velvet Cake mix. I’m in the “clear up my pantry and use items I have before they expire” mode. I just don’t like to throw away food.
I was contemplating making cupcakes, but my bundt cake pan was calling my name. Also for the sake of simplicity and time, I gave it a try.
I really, really like how the cream cheese icing came out. It was yummy. To the cake mix instead of using vegetable oil I used olive oil and added 2 tablespoons of mayonnaise. The result I believe was a super moist red velvet bundt cake. I was very pleased and so were the little ones that got the chance to taste it.
