I got this recipe from my mother. I remember eating the banana pancakes when I was a child back in Panama. My mother was and still is the type of person who doesn’t waste any food. So when bananas were ripe, we made Oh Mighty Ripe Banana Pancakes for breakfast!
What I love about this recipe is that it makes the kitchen smell so good. I love the smell of warm bananas on the stove. Then of course the natural sweetness of the bananas make it such a perfect treat.
Ingredients:
3 ripe bananas (mashed)
1 beaten egg
4 tbsp flour (or more to increase volume)
1 tbsp honey or sugar
Maple syrup to taste
Mix all the ingredients in a bowl. It will have a paste consistency.
Put butter in a pan at medium heat. Pour patties onto pan so that they’re no bigger than the spatula you plan to use to flip them.
Cook at medium heat, they will get a nice brown color. Should take no more than 10 minutes to make.
It’s absolutely yummy. Kids love it and it’s a fun way to eat those ripe bananas. You may have them with maple syrup as you would with any other pancakes or add fresh fruit and cool whip. The sky is the limit when it comes to eating this absolutely delicious treat.
