Reese’s Cookie Cups just out of the oven.

I’m visiting a friend and her favorite are Reese’s peanut butter cups. So I found the recipe from Raining Hot Coupons and got my inspiration for creating these.My revisions are below:

Reese's Cookie Cups

  • Servings: 36-48
  • Difficulty: easy
  • Print

Ingredients:

1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, slightly softened
1/2 cup peanut butter
1/2 cup sugar
1/2 cup light brown sugar
1 egg
1/2 teaspoon vanilla extract
48 Reese’s Peanut Butter Cups, miniature

Preparation:

  • Preheat oven to 375° degrees.
  • Cream butter until smooth.
  • Add both sugar and beat until fluffy.
  • Add egg, peanut butter and vanilla extract until combined.
  • Add flour in 2 parts and mix until combined
  • Form into 1 inch balls and place in mini muffin tray.
  • Bake for 10-12 minutes until puffy and lightly brown.
  • Remove from the oven and place 1 unwrapped Reese’s cup in each cookie cup.
  • Cool completely in the mini muffin pan.
