I’m visiting a friend and her favorite are Reese’s peanut butter cups. So I found the recipe from Raining Hot Coupons and got my inspiration for creating these.My revisions are below:
Reese's Cookie Cups
Ingredients:
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, slightly softened
1/2 cup peanut butter
1/2 cup sugar
1/2 cup light brown sugar
1 egg
1/2 teaspoon vanilla extract
48 Reese’s Peanut Butter Cups, miniature
Preparation:
- Preheat oven to 375° degrees.
- Cream butter until smooth.
- Add both sugar and beat until fluffy.
- Add egg, peanut butter and vanilla extract until combined.
- Add flour in 2 parts and mix until combined
- Form into 1 inch balls and place in mini muffin tray.
- Bake for 10-12 minutes until puffy and lightly brown.
- Remove from the oven and place 1 unwrapped Reese’s cup in each cookie cup.
- Cool completely in the mini muffin pan.

I made 3 batches (about 114). The majority is going to a cookie swap in a few hours. The rest to daycare and a few left for my family. But I already got request to make more! 🙂
