When it comes to treats for kids, easy does it. So I went the most sensible route, vanilla cupcakes.  Kids just love the icing and can care less about the cake anyways. So below are some different Easter decorations and the recipe. Enjoy! 🙂

Vanilla Cupcakes

  • Servings: 12

Vanilla cupcake recipe

Ingredients:

1/2 cup all-purpose flour
1/2 cup self-rising flour
5 tablespoons of unsalted butter (room temperature)
3/4 cup of sugar
2 eggs (room temperature)
1/2 teaspoon of vanilla extract
1/3 cup of milk

Preparation:

1-Preheat the oven to 350° Fahrenheit.
2-Sift the flours and set aside.
3-In an electric mixer, cream the butter until smooth.
4-Add the sugar and mix well. Make sure to scrape the bottom and sides.
5-Add one egg at a time and mix well.
6-Add the vanilla. Then the flour and milk in 2 parts. Mix until combined. Don’t over beat.
7-Divide the batter into a lined 12-count cupcake tin.
8-Bake for about 17-20 minutes depending on your oven.
9-Cool in a wire rack for 15 minutes before removing from the cupcake tin. Then cool completely before frosting.
