Blueberry Muffins


When you have blueberries, make blueberry muffins. 🙂

I ran across the recipe from Whole Wheat Blueberry Muffins and Enjoy Every Bite. And found it to look very healthy based on the ingredients.


Blueberry Muffins

  • Servings: 12
  • Difficulty: easy

Ingredients:

1¼ cup old-fashioned oats or quick oats
1 cup whole wheat flour
½ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
⅓ cup unsweetened applesauce
⅓ cup honey
2 eggs
1 cup 1% or skim milk
1 teaspoon vanilla extract
1 cup blueberries

Preparation:

  1. Preheat oven to 400° Fahrenheit.
  2. Line muffin pan with liners and spray liners with non-stick cooking spray.
  3. In a large bowl mix together oats, flours, baking powder, and salt.
  4. In a separate bowl mix applesauce, honey, eggs, milk, vanilla extract and blueberries.
  5. Combine all ingredients and mix lightly until evenly combined.
  6. Fill muffin liners almost to the top with batter.
  7. Bake at 400° for about 15 minutes or until inserted toothpick comes out clean.
  8. Cool on wire rack.
