When you have blueberries, make blueberry muffins. 🙂
I ran across the recipe from Whole Wheat Blueberry Muffins and Enjoy Every Bite. And found it to look very healthy based on the ingredients.
Blueberry Muffins
Ingredients:
1¼ cup old-fashioned oats or quick oats
1 cup whole wheat flour
½ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
⅓ cup unsweetened applesauce
⅓ cup honey
2 eggs
1 cup 1% or skim milk
1 teaspoon vanilla extract
1 cup blueberries
Preparation:
- Preheat oven to 400° Fahrenheit.
- Line muffin pan with liners and spray liners with non-stick cooking spray.
- In a large bowl mix together oats, flours, baking powder, and salt.
- In a separate bowl mix applesauce, honey, eggs, milk, vanilla extract and blueberries.
- Combine all ingredients and mix lightly until evenly combined.
- Fill muffin liners almost to the top with batter.
- Bake at 400° for about 15 minutes or until inserted toothpick comes out clean.
- Cool on wire rack.
