I recently got an Instant Pot Duo (6 quarts). I’m still trying new recipes and having a lot of fun making homemade meals. This rigatoni pasta and meat sauce is super quick, easy and delicious.
Instant Pot Rigatoni Meat Sauce
Ingredients:
2 lbs ground beef
diced onions and green peppers (as much or as little as you want)
olive oil
2 tbsp Italian seasoning
1 box (16 oz) rigatoni pasta
1 jar (24 oz) pasta sauce
1 can (15 oz) diced tomatoes
4 cups of water or beef broth
Parmesan cheese to taste
Preparation:
- Turn on pot to the sauté setting, add olive oil to cook the onions and green peppers. Add the ground beef until browned.
- Drain the fat after browning the meat and return to the Instant Pot.
- Add the Italian seasoning, and stir.
- Add the water/broth and diced tomatoes, and stir.
- Add the pasta evenly over the mixture. Do not stir.
- Pour the pasta sauce over the rigatoni pasta and cover it completely. Do not stir.
- Cancel the sauté function. Put the lid on the pot and turn the steam release knob to the sealing position.
- Use the manual pressure cook option. Use the + or – buttons to select 7 minutes (for rigatoni). If you are using a different pasta, set the cooking time to half of the time recommended in the pasta packaging.
- When cooking if complete, do a quick release of the pressure/steam by turning the steam release knob to the venting position.
You may serve directly from the Instant Pot or transfer it to a serving dish. Add Parmesan cheese as desired.
