I was inspired by the recipe from BonAppetit.com.
I put my on twist to this recipe here:
Ingredients:
6 oz of fresh cranberries (rinsed)
3 tablespoons of maple syrup
1/4 teaspoon of cinnamon
3/4 cup of unsalted butter (softened)
Preparation:
1- Combine fresh cranberries and maple syrup in a medium saucepan.
2- Cook over medium-high heat, stirring often.
3- After about 5 minutes, mash the cranberries to expedite the breakdown process. Keep stirring.
4- Total cooking time is about 8-9 minutes.
5- Remove from heat and cool completely.
6- With an electric mixer combine cooled cranberries, cinnamon and softened butter.
7- Use at room temperature or chilled.
Notes:
1- I didn’t completely mashed the cranberries because I like the texture of this butter.
2- The taste can be a bit more acidic to some people than others. Feel free to add more maple syrup to the recipe.
