Oatmeal raisin cookie sandwich with mascarpone frosting


This was absolutely delicious and a crowd pleaser.

I replaced the dried cranberries with raisins on this previous post: Oatmeal and cranberry cookies

Oatmeal Raisin Cookie Sandwich with Mascarpone Frosting

  • Servings: 12 sandwiches
  • Difficulty: easy

Mascarpone frosting:
8 ounces mascarpone cheese
2 cups of confectioners sugar
1/2 teaspoon of vanilla extract

Preparation:
1-Make the oatmeal raisin cookies as instructed.
2-Let cookies cool completely.
3-Beat mascarpone cheese until creamy.
4-Add confectioners sugar. One cup at a time. Continue beating until combine.
5-Add the vanilla and make sure it all incorporates well.
6-Spread a generous amount of frosting on the flat side of the cookie and sandwich with another.
