4th of July Cupcakes

These are my simple yet absolutely delicious 4th of July cupcakes.
It’s a vanilla cupcake with vanilla buttercream icing.
They’re topped with sliced strawberries and blueberries.

Vanilla cupcake recipe

Ingredients:

1/2 cup all-purpose flour
1/2 cup self-rising flour
5 tablespoons of unsalted butter (room temperature)
3/4 cup of sugar
2 eggs (room temperature)
1/2 teaspoon of vanilla extract
1/3 cup of milk

Preparation:

1-Preheat the oven to 350 degrees Fahrenheit.
2-Sift the flours and set aside.
3-In an electric mixer, cream the butter until smooth.
4-Add the sugar and mix well. Make sure to scrape the bottom and sides.
5-Add one eggs at a time and mix well.
6-Add the vanilla. Then the flour and milk in 2 parts. Mix until combined. Don’t over beat.
7-Divide the batter into a lined 12-count cupcake tin.
8-Bake for about 17-20 minutes depending on your oven.
9-Cool in a wire rack for 15 minutes before removing from the cupcake tin. Then cool completely before frosting.

Decorate your cupcakes with sliced strawberries and blueberries for a festive look.
