I’m all for easy, fast, but fresh desserts. This one hit the spot for being the middle of the week and having a friend over for dinner.
French Vanilla Pudding Pie
Crust:
1-1/2 cups chocolate graham cracker crumbs (About 9 full/long crackers)
8 tablespoons of unsalted butter, melted
Filling:
1 small box of French Vanilla Pudding
Cool whip and chocolate morsels to taste
Preparation:
Crust:
1-Preheat oven to 375° Fahrenheit.
2-In a small bowl, mix together cracker crumbs and melted butter until a crumbly, moist mixture forms.
3-Gently but firmly press the cracker mixture into the bottom/sides of a 9 inch pie dish.
4-Bake for 10 minutes. Set aside to cool completely.
Filling:
1-Prepare the French Vanilla pudding according to package instructions.
2-Pour the mixture into the cooled graham cracker crust.
3-Refrigerate for at least an hour.
Serve with Cool Whip and chocolate morsels.
