Vanilla Buttercream

This is by far the best buttercream icing I’ve ever had. It’s creamy, delicious and it melts in your mouth.

Try it for yourself. You’re welcome! 🙂

1/2 cup (1 stick or 8 tbsp) unsalted butter
4-6 cups confectioners’ sugar
1/2 cup milk
1 tsp vanilla extract

In a large mixing bowl place the butter. Add 2 cups of sugar, milk and vanilla. On medium speed of an electric mixer, best until smooth. Keep adding 2 cups of sugar at a time and beat well.
It should be a nice creamy consistency and thick enough for spreading.

Add food coloring for fun decorating. Make sure to mix well and scrape the sides of the bowl while mixing to make sure the food coloring is well incorporated.

You may store unused icing in air-tight container for up to 3 days.

It makes enough to decorate 12 cupcakes.

Yum!

Edible Reflections

There are still a few more weeks of summer left. With that I set out to find cool treats for my kids and I to enjoy. That’s when I came across a recipe for yogurt popsicles from Andrea Rincon’s  blog that I found on Pinterest. I knew immediately that I could easily make these with items already in my fridge.  Continue reading

I scream “More Please!” at Hot Rod Ice Cream Shoppe

Wall clock made with old license plates

Wall clock made with old license plates

We had a late night escapade with the kids over the weekend. Anything after 8pm is late for our family. The kids were in their pajamas and ready to have ice cream.
We had never been to Hot Rod Ice Cream Shoppe but knew that it was inside the Yogi Bear’s Jellystone Park(TM). Getting to it was like coming up to a smaller version (very small version) of the entrance to Disney World. The road was winding and then…there he was…Yogi to the left. I kept waiting to see if any pic-a-nic baskets going to get snatched off tables!

Wild Flours – picture by Edible Reflections

For the first time this Friday I was able to stop by the Hip Donelson Farmers Market. As I walked around the different vendors, my eyes and feet gravitated towards Wild Flours Organic Mill and Bakery. What can I say, I LOVE BREAD and anything related to it!

A beautiful display of breads, muffins, cinnamon rolls and scones were calling out to me all at the same time! I literally kept going back and forth trying to decide what I would pick. Continue reading

Thank you with a cupcake

Thank you with a cupcake

Thank you with a cupcake by Edible Reflections

What better way to thank someone than with a cupcake? It’s thoughtful, crafty and plain genius. It shows that person that you either took the time to make it or pick it out just for them. Isn’t that what it’s all about? Making others feel special and unique can brighten their day. It also makes us feel great when we see someone smile over something we have given them.
