Vanilla Buttercream

This is by far the best buttercream icing I’ve ever had. It’s creamy, delicious and it melts in your mouth.

Try it for yourself. You’re welcome! 🙂

1/2 cup (1 stick or 8 tbsp) unsalted butter
4-6 cups confectioners’ sugar
1/2 cup milk
1 tsp vanilla extract

In a large mixing bowl place the butter. Add 2 cups of sugar, milk and vanilla. On medium speed of an electric mixer, best until smooth. Keep adding 2 cups of sugar at a time and beat well.
It should be a nice creamy consistency and thick enough for spreading.

Add food coloring for fun decorating. Make sure to mix well and scrape the sides of the bowl while mixing to make sure the food coloring is well incorporated.

You may store unused icing in air-tight container for up to 3 days.

It makes enough to decorate 12 cupcakes.

Yum!

I knew immediately that I could easily make these with items already in my fridge.  Continue reading
