The holidays to me is about pleasing our friends and family. This pie reminds me of a friend that if you don’t stop him, he can eat a whole pie all by himself! That’s how much he LOVES lemon meringue pie.
The past seven years his family has kindly opened their home and their hearts during Thanksgiving (and many other times during the year as well). So it’s always an honor and pleasure to bake his favorite, lemon meringue pie. 🙂
Filling Ingredients:
1 cup white sugar
2 tablespoons all-purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
2 lemons, juiced and zested
2 tablespoons butter
4 egg yolks, beaten
1 (9 inch) pie crust, baked

Preparation:
1-Preheat oven  to 350 degrees F (175 degrees C).
2-Make and cool pie crust.
3- In medium saucepan, whisk together sugar, flour, cornstarch and salt.
4- Stir in water, lemon juice an lemon zest. Cook over medium-high heat, stirring frequently until mixture comes to a boil. Stir in butter.
5-Place egg yolks in medium size bowl and gradually whisk in 1/2 cup of the hot sugar mixture.
6- Whisk egg yolk mixture back into remaining sugar mixture. Bring to a boil and continue to cook while stirring constantly until thick.
7- Remove from heat and pour filling into baked pastry shell.
9-Once you have made the meringue frosting, place a generous amount on your pie and bake in preheated oven for 10 minutes or until meringue is golden brown.
